Despite his excellent repertoire of credentials from restaurants in Bali, London, Singapore, France and Thailand, Chef Nguyen Quoc Nam is going back to his Vietnamese roots as the new chef-owner of high-end Vietnamese restaurant Annam.

In an effort to elevate his cuisine above the others, Nam insists on using live seafood such as lobsters and Sri Lankan crabs delivered daily to his kitchen and stored in glass tanks. These freshest-of-the-fresh ingredients are then skillfully made into authentic, traditional home cooking delights from Hanoi to the Mekong Delta.
