
After being officially opened in Jakarta on 22 May 2017, the restaurant named KAUM has become a favorite destination for lovers of authentic Indonesian cuisine.
Kaum, which means “clan” or “tribe” in Bahasa Indonesia, pays tribute to the more than 600 ethnic groups that make up Indonesia. KAUM presents a series of authentic Indonesian menus that result from exploring the major islands of Indonesia and working with remote tribal communities and independent local producers in their efforts to develop the KAUM menu and discover the rare and almost forgotten ingredients and techniques of Indonesian cooking.
Under the auspices of the Potato Head group, KAUM opened its first outlet in Hong Kong. The decision to open an overseas Indonesian restaurant certainly is a mission to popularize Indonesian food abroad as a form of respect for the diversity and wealth of the nation’s culinary traditions, whilst at the same timeraising its class. KAUM then focused on Indonesia by opening its first outlet in Bali, swiftly followed by its outlet in Jakarta which is located in the prestigious area of Jalan Menteng.
With the direction of Executive Chef Antoine Audran and Brand Brand Director Lisa Virgiano, the KAUM Jakarta menu aims to restore the fundamental focus of Indonesia’s culinary heritage – combining products sourced from the highest quality of small and responsible producers, as well as tropical indigenous ingredients. The menu incorporates signature dishes from Kaum Hong Kong and Kaum Bali, highlighting the archipelago’s rich and varied culinary traditions and cooking methods from Aceh to Maluku, and also features special dishes, available only at the flagship outlet in Jakarta.
Some of the signature dishes that you should endeavour to try are Gulai Udang Aceh, Burung Puyuh Malon Goreng Bumbu Rica-Rica, Bistik Jawa, Paha Kambing Guling Madu Pedas, Bobor Daun Kelor Kelapa Muda, and dessert dish Kue Lumpur Bubur Ketan Hitam, with many more explorations of various other Indonesian delicacies available.
KAUM Jakarta is sited in two buildings; a historic colonial house ready to greet you in the front area, and the main dining hall. This colonial-style house has been refurbished with exterior, original doors and windows as well as lush leafy terraces. In keeping with the aesthetics of the Potato Head Family, the interior design balances contemporary design with antique furnishings as well as old ceramic tiles, known as tegel Jawa.
KAUM Jakarta resonates with Indonesia’s storied past, an industrial hangar featuring precast wall panels inspired by Dayak motifs, is KAUM’s commitment to represent the Indonesian tribes and showcase the traditional skills of these tribes in the context of this new restaurant. There is also a music bar, inspired by the Music Room at Potato Head Hong Kong, with hanging art located in the central area and the focus of the visitors of this restaurant. The open kitchen area also provides an inclusive feel, with views of the chefs blending various dishes.
