The Ritz-Carlton Jakarta, Pacific Place is proud to announce the appointment of Giovanni Baietta as its new Director of Food and Beverage. With over a decade of experience in the ultra-luxury hospitality sector, Giovanni brings a distinguished background in Michelin-starred dining, five-star hotels, and globally renowned resorts. His expertise spans multiple continents, including Europe, Asia, the Middle East, and Africa, making him a dynamic leader with a truly international perspective.

Giovanni’s career has been defined by his passion for fine dining, meticulous attention to detail, and an unwavering commitment to delivering world-class guest experiences. His journey has taken him through some of the most prestigious establishments in the industry, including La Mamounia in Marrakech, Shangri-La Group, Hotel Splendide Royal in Switzerland, AMAN Rosa Alpina, and the three-Michelin-starred 81⁄2 Otto e Mezzo Bombana in Hong Kong, where he also curated a wine cellar with over 2,000 references. He has also had the unique privilege of working aboard the Venice Simplon-Orient-Express, one of the most legendary luxury trains in the world.

In his most recent role as Director Adjoint of Food and Beverage at La Mamounia, a renowned five-star property named “Best Hotel in Africa”, Giovanni oversaw twelve world-class dining venues, leading a team of over 280 professionals and driving significant revenue growth. His well-rounded strategic leadership and commitment to culinary excellence solidified the hotel’s reputation as a global destination.

Throughout his career, Giovanni has been recognized for his relentless pursuit of excellence, innovation, and guest satisfaction. He has a proven track record of transforming culinary programs, refining luxury service standards, and delivering exceptional results across some of the world’s most prestigious properties. His expertise spans fine dining operations and large-scale event management, ensuring exceptional dining experiences. Holding a Diploma in Wines and Spirits from the accredited WSET (Wine & Spirit Education Trust), he brings deep expertise in wine curation, seamlessly integrating it into the broader dining experience. With a hands-on leadership style and a passion for mentorship, Giovanni continues to inspire teams while shaping the future of luxury hospitality.
