Marking his debut at Keyaki, Chef Tadashi presents a thoughtfully curated selection of four signature dishes that capture the essence of Japanese culinary heritage, while also reflecting his refined touch. All the dishes are imbued with his years of experience in Japanese cuisine, which blends traditional aspects through an authentic Japanese menu and comfort flavor combinations with modern techniques in cooking and presentation, designed to deliver a culturally rich dining experience for guests. One standout is the Alaskan Black Cod Pirikara, marinated in miso and finished with a sweet and spicy glaze made from kanzuri chili citrus, resulting in a rich umami flavor Another is a delicate and refreshing dessert – the Mizu Mochi with Kuromitsu and Kinako. “Mizu” translates to water in Japanese, and the mochi itself resembles a dewdrop; soft and translucent, it is characterized by melt-in-your-mouth sweetness, freshness in every bite, and a nutty hint from the Kinako. Other notable creations include Tuna or Salmon Tataki Sashimi, drizzled with aromatic truffle sauce, and Aspara Shiitake Kuwayaki, enhanced with Yuanji Sauce and crispy garlic chips.
In celebration of Chef Tadashi Inose’s arrival, Pan Pacific Jakarta unveils a new weekday lunch buffet, designed to transform the traditional lunch break into an exceptional dining experience that reflects both the artistry of Japanese cuisine and the elegance of the restaurant’s sky-high setting.
