
Bali’s culinary landscape welcomes a new chapter with Oliverra Tables, a dining series introduced by Oliverra, the Mediterranean signature restaurant at Umana Bali, LXR Hotels & Resorts. More than just a dinner series, it’s an evocative platform for culinary collaboration, sustainability, and storytelling rooted in place.
Oliverra, perched dramatically atop Ungasan’s limestone cliffs, has long embodied intentional dining—where every element, from ingredients to atmosphere, is laced with purpose. This new initiative extends that ethos by bringing in guest chefs, producers, and culinary thinkers who share a commitment to craftsmanship, cultural depth, and conscious cooking.
Each edition of Oliverra Tables will explore evolving themes, offering a multidimensional dining experience that bridges people, philosophies, and local terroir. The series debuted with a collaborative dinner alongside Dome by Potato Head, a Bali culinary hub celebrated for its ingredient-led and nature-inspired approach.
One of the evening’s standout dishes was a charcoal beef creation accented with rosna sarma and mung bean—a bold yet introspective flavor journey blending earthy Balinese roots with smoky Mediterranean soul. The menu also featured a market fish dish layered with andaliman jus, coffee jelly, and ginger flower pickles. Its sharp acidity and fragrant complexity provided a refreshing counterpoint, reflecting Dome’s vibrant culinary perspective.
To enhance the experience, each course was paired with wines curated to complement both flavor and narrative. Highlights included Fantini Trebbiano d’Abruzzo, Ripoli Rossato, and Vigneti del Vulture Sensuale Moscato—each deepening the sensory layers of the evening. At a price of IDR 1,950,000++ per person, with an optional wine pairing at IDR 2,500,000++, the experience delivered more than exceptional cuisine—it wove a tapestry of story, place, and shared intention.
