Inspired by the sun-drenched shores of the Mediterranean—from Amalfi tavernas to Levantine spice bazaars—this culinary chapter blends elemental cooking with Bali’s local bounty. At the heart of the experience is the Josper grill, a Spanish charcoal oven fueled by coffee wood. It delivers flame-kissed dishes with smoky depth and subtle sweetness, turning each plate into a story told through fire.

The new menu at Oliverra is a vibrant celebration of Mediterranean soul and Bali’s elemental beauty. It opens with the Hokkaido Scallop Carpaccio, dressed in citrus emulsion, bee pollen, mandarin, and pistachio—a fresh yet complex introduction. The Flamed Australian Striploin follows with bold bottarga, black garlic, and fennel bulb pesto, while the Marinated Yellowfin Tartar pairs cured watermelon with ajoblanco for a refreshing contrast. Bravas Oliverra brings rustic comfort with confit potatoes, chorizo brava sauce, and lemon aioli. Seafood lovers will find warmth in the Seafood Saffron Risotto, rich with scallops and prawns, and drama in the Creamy Nero di Sepia, a squid ink tagliatelle with clams. From the land, the Braised Australian Beef Cheeks offer slow-cooked depth, served with caramelized celeriac purée, red wine sauce, baby carrots, and dukkha. The Josper-flamed signatures shine with Wood-Fired Australian Lamb Chops paired with Jerusalem artichokes, mint labneh, and sumac; Charcoal-Grilled Pork Tenderloin with apple purée and togarashi baby potatoes; and the Lobster Fideua, a shell-off bamboo lobster paella finished over open flame.
