CasaLena, an upscale Latin American grill house, offers a modern and vibrant take on Latin American cuisine, joins forces with Mata Karanjang, a refined Indonesian restaurant led by Chef Jovan Koraag, to launch a special collaborative menu available exclusively throughout August in conjunction with Indonesia’s Independence Day celebration.
This limited-time collaboration called ‘Flavors of Freedom’, whose menu symbolizes the spirit of Indonesian independence interpreted through bold Latin and Nusantara flavors. CasaLena’s signature blends the vibrancy of Latin flavors with sophisticated execution that truly brings out the flavor of Lena (woodfire) in its signature grill dishes.
Mata Karanjang, helmed by Chef Jovan, is known for its elevated take on Manadonese cuisine, where bold, spice-driven flavors meet refined technique and balance. Staying true to its roots while embracing creative expression, the restaurant’s philosophy aligns seamlessly with CasaLena’s approach to Latin American cuisine, resulting in fresh and deeply meaningful collaboration with highlight dishes including: Tuna Gohu Ceviche, Argentinian Empanada Cakalang, Taco Ayam Rica Pastor, Bife de Vacio Ragey, Lalampa with Mole, and Tres Leches Tequila Klappertaart.
“Indonesia’s independence is a momentous occasion that deserves to be celebrated in a meaningful way. This collaboration is our tribute — a cultural and culinary dialogue between Latin America and Indonesia, presented through a specially curated menu,” said Chef Silverio Martinez, Executive Chef of CasaLena. Chef Jovan Koraag, Executive Chef of Mata Karanjang, added, “I’m thrilled to collaborate with CasaLena for this special occasion. ‘Flavors of Freedom’ is more than just a menu — it’s a culinary celebration of identity and creativity. Each dish is a bold interpretation of Indonesian flavors seen through a Latin lens.”
Available only throughout August, Flavors of Freedom is a tribute to identity, heritage, and the power of collaboration—served on a plate.
