OLIVERRA LAUNCHES ‘MIXOLOGY COLLECTIVE’ WITH TAKETO UTSUNOMIYA OF NOTTE

Oliverra, the signature Mediterranean restaurant at Umana Bali, LXR Hotels & Resorts, introduces Mixology Collective, a new collaborative dinner series that explores the synergy between haute cuisine and cocktail craftsmanship. For its debut edition, Oliverra partners with Taketo Utsunomiya, the creative mind behind NOTTE Uluwatu’s bar program, to present a six-course pairing dinner that blends flavor, artistry, and storytelling.

Mixology Collective brings together leading chefs and bartenders from across Bali and beyond, offering diners a multi-sensory experience where each cocktail is designed to mirror, challenge, or elevate the dish it accompanies. The series reimagines the role of mixology in fine dining, treating cocktails not as complements but as co-creators of the culinary narrative.

The inaugural dinner takes place on Friday, November 7, 2025, beginning with a Verde Gin Tonic to set the tone for the evening. Guests journey through six pairings, including: Oysters with a NIKKA Coffey Gin martini, Scallop paired with a passionfruit-yuzu-bamboo cocktail finished with wasabi salt, Ravioli matched with an Aperol and vermouth highball, Coffee-smoked beef cheeks complemented by KOCH Mezcal and Bali’s LIMO liqueur and a delicate whiskey and Earl Grey tea cocktail to close on a mellow, fragrant note.

Each pairing reveals new layers of flavor, transforming the dining experience into a rhythmic progression of taste and texture. The collaboration between Oliverra’s Executive Chef Ngurah Putra and Taketo Utsunomiya reflects a shared philosophy—where unexpected harmonies and contrasts deepen the guest’s sensory journey.

The dinner is priced at IDR 1,700,000++ per person (food only), with an optional full pairing experience—including aperitivo, dinner, and cocktails—available for an additional IDR 800,000++.
