On Friday, 14 November 2025, Oliverra welcomes acclaimed French chef Stéphane Simond for an exclusive six-course pairing dinner, crafted in collaboration with Oliverra’s own Chef Angga Suarthama. Together, they present a seasonal tasting menu that celebrates connection, craft, and cross-cultural dialogue — all set against the dramatic cliffs of Ungasan. With Chef Stéphane, Oliverra explores how French refinement and Mediterranean generosity can find harmony on the cliffs of Ungasan.
The evening begins at Oliverra Deck with curated cocktails and aperitivo at sunset, followed by an intimate dinner inside Oliverra Restaurant, accompanied by the soul-stirring sounds of a live violinist. Each dish reflects a thoughtful blend of French elegance and Mediterranean heart — elevated by Balinese terroir and technique. Highlights include Monegasque Blue Fin Tuna Belly with saffron aioli and Mediterranean anchovies, Spiedini di Calamari with cuttlefish, harissa, and ginger flower butter, Fiore di Carciofi with yabbies kofta, arugula mint pesto, and vanilla oil, and Red Mullet Fillet in chilli-orange vinaigrette with chickpea fritter and mussel mouclade to mention a few.
