‘The Puglia Trilogy’ Alto X Mauri: An Exciting Collaboration Brings the Rich Culinary Traditions of Southern Italy to Four Seasons Hotel Jakarta

Alto Restaurant & Bar at Four Seasons Hotel Jakarta, on the 20th floor with stunning views of Jakarta’s glittering skyline, a superb backdrop to every meal, will host an unforgettable culinary journey, crafted by three of the finest Italian chefs in Indonesia on March 30 and 31, 2022. 

La Trilogia Puglia – or The Puglia Trilogy – features Four Seasons Hotel Jakarta Executive Chef Marco Violano and Executive Pastry Chef Lorenzo Sollecito in collaboration with the genius of Chef Maurizio Bombini from Bali’s award-winning Mauri Restaurant.

The menu focuses on dishes from Puglia, the southern region to which both Chef Marco and Chef Maurizio belong. The cuisine relies heavily on traditional techniques and the freshness of local produce – the purest expression of the natural bounty of land and sea. Elevated with fine ingredients and award-winning craftsmanship, these cucina povera specialties are traditional recipes with modern techniques.

Diners can sample one of three remarkable menus, especially created by the three chefs for this collaboration. On offer are masterpieces such as the Gravlax di Tonno e Ricciola – a duo of tuna and amberjack fish with green salsa, orange and Tropea sweet onion, along with Merluzzo – a flavorful combination of Alaskan cod fish, bell peppers, potato espuma, dehydrated olives and Sicilian-style mollicata pasta. The six-course menu will feature the pezzo di resistenza ­– the Braciole, a traditional preparation of Italian A5 wagyu, sago and frisella crumble made from dry-baked durum wheat flour.
 

Hailing from the northern region of Mezzocorona, Chef Lorenzo has reimagined the beloved Pumo Pugliese – a handmade acorn-shaped ceramic decoration used in gifting and as a symbol of good luck – into a mesmerizing dessert with gargano lemon, ricotta crème, pistachio praline and strawberry compote.
Guests will also have the option of choosing from two different wine-pairing combinations to complement their meal.

The Italian Trilogy collaboration menus are available for lunch and dinner on March 30 and 31, 2022 at Alto Restaurant & Bar at Four Seasons Hotel Jakarta.
