
At Royal Ambarrukmo Yogyakarta, history and hospitality intertwine through two extraordinary experiences that bring the grandeur of the Keraton into the modern day: Patehan and Ladosan Dhahar.
At Royal Ambarrukmo Yogyakarta, the grandeur of the past is brought vividly into the present through a series of tea ceremonies and fine dining experiences inspired by the ritualistic banquets of the Keraton Kasultanan Yogyakarta. Once reserved for the royal family, this tradition is now reimagined for guests who wish to savor the artistry and philosophy of Javanese culinary heritage.

Patehan, the royal tea ceremony, begins with guests donning traditional attire before touring the Kedhaton Ambarrukmo complex. Guided by Abdi Dalem custodians, visitors learn the stories behind the sacred spaces before witnessing a solemn procession. Attendants carry trays of delicacies in laku dodok, a crouched walk symbolizing humility, while a golden songsong umbrella shades the vessel of tea, signifying royal authority. The tea itself, brewed from water drawn from the Kedhaton’s ancient well, is bold and aromatic, paired with traditional treats. Sanggabuwana, a fusion of European choux and Javanese spices, speaks of cultural harmony, while the green‑hued Dadar Gulung offers sweetness from coconut and palm sugar. Alongside, klepon, wajik, and lupis complete the spread, each bite containing stories of heritage.

Complementing this is Ladosan Dhahar, a fine dining revival of the royal banquet. Once reserved for the Sultan’s table, dishes are presented in jodhang boxes by attendants, echoing rituals of devotion and respect. Menus are drawn from the favorite dishes of Sultan Hamengku Buwono VII, VIII, and IX, researched through archives and oral traditions with the guidance of gastronomist Prof. Dr. Ir. Murdijati Gardjito and historian Dr. Sri Margana. Each plate is a living document of history with recipes once confined to the palace kitchens, now revived with modern refinement. The result is three exclusive set menus that balance authenticity with contemporary elegance. Every bite reflects centuries of diplomacy, cultural exchange, and the richness of Javanese gastronomy.
