The main difference between  cognac and basic brandy, is cognac was produce in specific region in France, between Paris and Bourdeaux. Primary grapes that used in Cognag are thin, tart and low in alcohol, poor characteristic for table wines, but oddly enough , perfect for making brandy. The designations you see on Cognac labels—VS (Very Special), VSOP (Very Superior Old Pale) and XO (Extra Old)—are a guarantee of how long a Cognac has been aged. VS indicates that the Cognac has been aged at least two years, VSOP at least four years and XO (Extra Old) at least six years. Most Cognacs are aged much longer, however, featuring a blend of eaux de vie that can date back decades. Some famous Brand for Cognaq are Remy Martin, Martell, Hennessy.

Malt whisky is the ‘original’ whisky of Scotland. Although other grains were used, barley was grown specifically for making beer and whisky. However, with the success of blended whisky in the late 19th century, little was drunk as single malt outside the Highlands until the 1980s, when ‘the vintages of the North’ were rediscovered by an enthusiastic public and began to be made available by distillery owners. Although made from very simple materials – malted barley, water and yeast – the make of each distillery has an individual character, owing to a variety of factors, such as the length of fermentation time, the style and size of the stills, and how they are operated, the type of condensers used and amount of spirit saved (called the cut) From the cask that used for maturing the whisky, it make a distinctive character on the tasting notes such as malt, vanilla, smoky and nutmeg.  Macallan one of the most famous single malt whisky.
