Following months of buzz, The St. Regis Jakarta has finally unveiled its newest dining destination: Solène. Inspired by the warmth of Provence and the effortless glamour of the Côte d’Azur, the restaurant brings a laidback yet chic spirit to the city through a light, contemporary interpretation of Southern French Mediterranean cuisine.

Named after soleil, the French word for sun, Solène embraces ingredient-driven cooking rooted in simplicity, seasonality, and generosity. The restaurant feels refined yet breaks out from the mould of fine dining. Plates are designed for sharing, conversations are meant to linger, and the atmosphere encourages conviviality — though solo diners will feel just as welcome.

Leading the kitchen is Chef Maxime Sacchetto Foglia, whose background in classical French cuisine, Italian heritage, and experience in Michelin-recognized kitchens inform a style that is polished yet approachable. His dishes are delicate yet layered with unexpected depth — refreshingly bold while remaining familiar to the Asian palate.

He highlights a curated selection of dishes that define Solène’s approach to Southern French cuisine. My favorites: Seafood‑driven plates such as the crudo de sériole and daurade rouge à la vierge de tomates. And you can always tell of a chef’s expertise when they can make modest items like the humble cauliflower into something that is fit for a celebratory meal: The Choufleur Rôti.

“At Solène, I want guests to feel good when they dine with us — to relax, enjoy themselves, and spend meaningful time around the table,” says Chef Maxime. “It’s about good food, good company, and time well spent.”

The interiors echo the understated elegance of the Riviera, with white walls adorned with coastal-inspired artwork, crisp tablecloths, and warm ambient lighting. Seating up to 70 guests for dinner from 6 PM to 10.30 PM, the intimate dining room strikes a balance between refinement and ease. Here, meals unfold unhurriedly, hospitality feels instinctive, and diners are invited to slow down and savour the sun-soaked pleasures of Southern French Mediterranean dining.
