
Grand Hyatt Jakarta introduces Markus Zuck as the new Executive Chef who leads the overall food production in the newly renovated iconic hotel. Markus commenced his career with Hyatt in 2006 at Hyatt Regency Cologne as Sous Chef. He then moved to Hyatt Regency London as Senior Sous Chef before taking on the role of Chef de Cuisine at Hyatt Regency Kiev in 2011. Two years later, he travelled to Asia to work at Grand Hyatt Doha as Chef de Cuisine and subsequently Grand Hyatt Hong Kong as Executive Sous Chef.
Markus’ first appointment as Executive Chef took place at Grand Hyatt Bangkok Erawan in 2017. Prior to joining Grand Hyatt Jakarta, he was with Hyatt Regency Beijing Wangjing from 2020 to 2022. With more than 27 years of culinary experience from around the world, Markus aims to bring his ‘East meets West’ culinary influence to the newly renovated hotel. He is equally eager to explore Indonesian cuisines and local tastes. ‘My philosophy in culinary is “never good enough”, and it motivates me to discover new flavours and keep innovating,’ he shared.
Markus oversees six restaurants and a bar at Grand Hyatt Jakarta, namely Grand Café, C’s Steak & Seafood, Sumire, Poolside Restaurant, Fountain Lounge, La Moda and burgundy. Apart from those outlets, he is also in charge of the banquet kitchen and the hotel’s executive lounge, Grand Club.
